This is a low-calorie chicken salad that's bursting with flavor and color. Eat it on
wholegrain bread as a sandwich, or on a bed of romaine lettuce as a salad.
Ingredients:2 cups Gelson's Finest barbecued chicken,
skin removed, diced
1 1/2 ribs celery, diced
1/2 cup seedless red grapes, halved
1/4 cup Flanigan Farms slivered almonds
1 scallion, green parts only, chopped
1 cup Horizon Organic plain and simple nonfat
1 tablespoon Best Foods light mayonnaise
1 tablespoon curry powder
- black pepper to taste
1 small shallot, minced
12 Milton's Healthy Dark and Hearty grain bread
6 cups romaine lettuce, torn (optional)
In a medium bowl, combine the chicken, celery, grapes, almonds, and scallions.
In a separate bowl, combine the yogurt, mayonnaise, curry powder, pepper and shallot.
Pour the dressing over the chicken mixture. Toss well, and refrigerate until cold.
Divide the salad among the slices of bread or scoop onto romaine lettuce leaves.
